When referring to corpses, what do the stages mean?

Corpses are referred to in stages 1, 2, or 3. However what does that mean?

Which is the most decayed and which one is the least decayed?

Most corpses disappear after 11 minutes, but some take longer to decay, for example a cat - 15 minutes.

1st stage - fresh (5 minutes)

2nd stage - decaying (5 minutes)

3rd stage - bones (1 minute)
