Hey, I wonder if the item 'Watch' is a main tool or anything related to carry out any Quest, might be related to an old quest which is already forgotten?

I have this doubt because I have read few books (of Tibia In-Game) in which this 'Watch' is mentioned with some kind of important purpose behind that might not be very clear at the first sight. If there's any clarification for this, please go ahead, thanks in advance

The ones that have robbed my attention were mainly the Potion Books from the Library of Jakundaf. They clearly tell that the 'time itself' is a 'key-factor' in order to prepare most of these potions or in other words, make them work properly. I hope that my answer is clear enough, thanks for the interest tho!

I haven't found any quests that would require having a watch.

However, there are some quests that requires certain time of the day and for example:
Ghostly Wolf is part of the Threatened Dreams Quest and is only available at night.
There's also NPC A Skull which you meet during Grimvale Quest. You can talk to this one only when it's night as well.

It's still possible that there are some undiscovered or unsolved quests like Serpentine Tower and it's mystery, where watch could play a big role!
