Is it possible to have 2 prey on the same monster?

A character can have up to 3 prey slots. Is it possible to roll and then select the same monster on 2 or even 3 slots and have the bonus added up? Eg. better exp from slot 1 + better loot from slot 2

No, it is not possible.

While rolling for a prey, all currently selected monsters are off the random choice. That has some interesting consequences - but that also means that it is not possible to roll the two preys on the same monster.

That also means when you are looking for a particular monster, it is better to keep your other prey slots on the "choose one of 9" phase. If you happen to have 3 prey slots, that means during selecting monsters for your freshly roll there are 18 less monsters to choose from - increasing your chances to get a monster you want.
