There used to be a channel called Game-chat, what happened to it? Am I just missing it or where is it?

On the 8.7 update (December, 2010), the Game-chat was renamed to "World Chat":

Please also note that the new Tibia Rules are effective as of today. In addition, several public channels have received a new, clearer name. The default channel has been renamed to "Local Chat" and the trade channel has been renamed to "Advertising". Since players are now allowed to speak in their native language in all channels, the real life chat channel has been removed and the game chat channel has been renamed to "World Chat".

As the news states, it was part of a bigger change in the names of all chats as well as changes in the Tibia rules. This, however, was followed by another change in Update 8.71 (January 2011):

After the winter update, we received lots of feedback from players who wished for an additional chat channel in which the use of English is required to facilitate the communication between people of different mother tongues. So here it is!

So basically, you can say that the Game-Chat and RL-Chats, which used to be moderated based on their content (and where only English was allowed), were changed into the World and English Chat, in which "any" content is allowed but with different language restrictions.
