How to block someone from using the Levitate spell?

Levitate is an important Tibia spell, and it can mean everything in a PvP or PvE situation.

However, what can I do to block this spell from working in places where it normally works? I've seen some people doing weird tricks where you can use it to go up to the roof of a house but you can't leave using the place where the spell was cast if the place was a door tile and the door get closed

Seems an important information to know, specially because people can also use it against you.

In PvP, if you are in PvP situation (or open PvP situation by using red Mode Hans) with the player who did the hur Up or hur down, you can block his way back to your floor by using a Magic/Wild grow wall in the spot.

I think what you tried to say, is that in an opened dolor that allows you to hur Up/down, when the door is closed you are not longer allowed to go back to the spot

if toss a Goblin Statue right in a place where levitate works, this statue is an impassable object ( https://tibia.fandom.com/wiki/Goblin_Statue ) like a magic wall for example. Will it block the levitate as well? Or it depends which object I put there?

statues and other 'impassable objets' do not block Levitate spell, when using it you will appear over it.
